This recipe is from my newest favorite restaurant, Cefi. I love their pizza, pasta, and salad creations. This is my go-to recipe for most of the week, especially during the summer.

This would be the perfect recipe for the summer. It’s a bit harder to say why. I don’t know why Cefi would be any good.

Well, it turns out that cefi is a Mediterranean dish of mashed potatoes, cheese, and cucumbers. It may not be the best, but it is easy to make, fast to make, and you can use up what you have on hand.
